Under is Europe's first underwater restaurant, and at 500 square metres the world's largest of its kind. Designed by Snøhetta, the 34-metre concrete monolith tilts from the rocky shoreline down through the surface and comes to rest on the seabed five metres below. A vast panoramic window at the far end looks straight into the North Sea, where fish, kelp, and whatever the currents bring drift past while you eat.

The restaurant opened in 2019 near Lindesnes and serves a seasonal set menu of 10 to 12 courses built around local ingredients: wild-caught seafood, foraged plants, and produce from the surrounding Sørlandet coast. It holds a Michelin star. Beyond the food, the building doubles as a marine research station, with cameras and sensors monitoring the species that have colonised the rough concrete exterior, which was designed to function as an artificial reef.

Reservations fill up well in advance. The experience is expensive and exclusive, but it is genuinely unlike any other restaurant in Norway.
